Why grain Matters: Sensory attributes of grain varieties

Abstract

Sensory attributes of new make spirit are often attributed to production process and distiller intervention. Traditionally whisky is produced using approved grain varieties stemming from common genetic origins. This study is to assess the impact of new make production using disparate varieties. Differences in sensory attributes are compared between varieties.

Biography

Originally born into a family of winemakers Dave joined Archie Rose in 2015 as one of the company’s first three employees, taking on the role of master distiller in 2016. Dave has been awarded Gin Distiller of the Year at the Icons of Gin Awards and Master distiller of the year twice at the Spirits Business Awards. He has a passion for the technical aspects of distilling, topping his global class when undertaking a Diploma at the Institute of Brewing and Distilling, receiving the Worshipful company of Distillers Scholarship. Dave is currently studying his Master distiller qualification with the IBD.
