Brewing tomorrow's food - Brewing technology for the fermentative production of alternative proteins

Abstract

Using precision fermentation, animal or plant cells can be specifically programmed or optimised to produce a specific product such as enzymes, fats, proteins, vitamins, flavourings and natural pigments. Fermentatively produced proteins can then be combined with other ingredients and further processed to reproduce meat, egg or dairy products.

A concrete example of the cultivation and replication of such proteins is biomass production. Here, cells are placed in a tank where cell multiplication is initiated. This process is of course well known in the brewing industry, as the same processes are used for yeast propagation since decades. To implement this technology in industrial scale
a specialized Bioreactor concept was developed on the basis of the proven Poseidon fermentation unit from brewing technology and works with a circulation unit instead of an agitator. In addition, the recirculation unit is equipped with aseptic valve technology and a low-shear aseptic pump. Integrated in a sterile tank with steam or condensate barrier, cells can be cultivated or fermentations carried out.
This technology also could be retrofitted in existing fermentation tanks, allowing to use free fermentation capacities in the brewing industry to support the world's growing demand in alternative proteins in the future.
The presentation will focus on key technologies as well as latest data of current installations.

Biography

Born in Bavaria, Mr. Thomandl has been fascinated by beer and its production already since his early years. As a consequent step, he studied brewing and beverage technology in Weihenstephan, where he graduated with a master’s degree. He joined Krones Steinecker in 2013, starting in the quotation department for process automation, followed by years in the R&D department as project manager for development projects (dynamic and continuous fermentation), responsible for engineering, execution and commissioning of pilot plants. Since 2016 Mr. Thomandl has joined the sales department at Steinecker for the Asian Pacific region. Since 2023 in position as Head of Sales he is strongly focusing on technology for sustainable brewing, circular economy, sustainability assessments, energy upgrades and retrofits as well as alternative food and proteins as part of Krones "solutions beyond tomorrow".
