I am the Head of Manufacturing at Cascade Brewery in South Hobart. As Head of Manufacturing at Australia's oldest brewery I am responsible for the end to end production of beer, cider, fruit concentrate and vinegar production. I began my career in the brewing industry in 1997 upon the completion of an Honours degree in Industrial Biology in Ireland. I trained as a Brewer with a start-up brewery – Carlow brewing Co. and found early success in brewing competitions winning a Champion Trophy for O’Hara’s Dry Irish Stout at the Brewing Industry International Awards. I completed the Diploma in Brewing through the Chartered Institute of Brewing and Distilling and as my career expanded into different areas (including the Guinness Brewery in Ireland), I went on to complete four modules of the Diploma Master Brewer exams. I moved to Australia in 2001 and have worked in craft brewing (Townsville Brewing Co.) as well as commercialisation of NPD’S for Diageo Australia. I also spent some time in the world of distilling with time spent as Production Manager for Distillation and Capital Projects Manager at the Bundaberg Distilling Co. Through-out my career I have led multiple teams and projects that supported large capital investments & commercialized new product developments in alcoholic beverages as well as food production.
