Australian Rum Industry - a current perspective in comparison to other key global rum industry producer regions.

Abstract

Our century plus old Sugarcane Spirits industry in Australia has historically been influenced by colonial links to several global industry giants - Barbados, Guyana, Antigua and Jamaica.

As the eighth largest global sugarcane crop producer, Australia produces approximately 1,000,000 MT of C-Molasses per annum and is dominated by fuel ethanol producers utilising sugarcane raw material substrate.

Contemporary industry improvements across various global regions favour the utilisation of B-Molasses and sugarcane juice substrates to optimise ethanol productivity and by-product (Distillery Spent Wash/ Vinasse/ Dunder) sustainability. Distillery Spent Wash treatment processes, technology and innovations will also be highlighted.

This presentation will offer a summary of an evolving raw material preference, optimising process sustainability and highlight key improvement opportunities for the Australian Rum sector.

An eminent Australian rum industry figure with global reach across all facets from operations, manufacturing, bulk contract supply to collaborative partnerships and award-winning New Product Development. As Chief Executive Office of Sydney Rum Distillery – an ambitious future of Australian Rum awaits with a global market focus to take our diverse sugarcane spirits to the world. Steve is an international spirits competition judge and Asia Pacific region sugarcane and rum industry history expert. His previous role as Group Distiller managing Australia’s oldest operating Distillery - Beenleigh Rum and the Twenty Third Street distillery operational site, is in addition to 20 years of FMCG food & beverage experience. Sydney Rum Distillery recently the acquired the non-distillery producer CARGO CULT Spiced Rum brand including distribution in Australia and is focused on distribution expansion in UK, Europe and USA markets.
