Hands-on sensory analysis of Aussie hops in different formats, from dried flowers to traditional pellets and liquid products

Abstract

Dive into a world of hopportunity! Train your brain to accurately describe the hop characters your senses are experiencing using the Hopsessed® flavour vocabulary that has been developed with the help of master brewers, cicerones, sommeliers and perfumers to guide structured and descriptive hop sensory analysis. Attendees will complete a guided analysis of world-renowned Aussie hops through a mixture of methods including a rub n’ sniff of dried flowers, grinding hop pellets, as well as gradual dosing of liquid products. Using the same Aussie hops throughout this process, attendees will learn how to weigh up the aroma and flavour outcomes of each of these different product formats relative to brewing yield.

Biography

A passion for people, learning and beer has seen Michael work in the brewing industry for 17 years. He cut his teeth working the cellars at Little Creatures and Gage Roads, while completing his Graduate Diploma in Brewing at Edith Cowan University. He then graduated to Head Brewer at Sydney Brewery, where he led the Lovedale brewery to trophies at the AIBAs and Royal Sydney Show in its first year of operation. Along the way, Michael dove headfirst into the world of beer judging, judging every domestic competition, as well as Japan, New Zealand, World Beer Cup and GABF. As HPA’s National Sales Manager, Michael uses his expertise in leadership, sales, sensory evaluation, and technical brewing to help brewers make great beer.
