FLYing High: Revolutionizing Yeast Propagation in Brewing
Abstract
Since the late 19th century, yeast propagation methods have evolved into a nearly universal approach, involving a laboratory seed train and brewery propagation. However, complications often arise, impacting yeast handling and production efficiency. To address these challenges, we introduce a revolutionary frozen liquid yeast (FLY) format that eliminates the need for a laboratory seed train. This format offers the benefits of long shelf-life and high purity, based on 1 kg frozen yeast blocks supplied in bags. Full-scale industrial brewing trials demonstrate consistent yeast propagation with higher cell count and faster results compared to traditional methods. By omitting the laboratory propagation, brewers can save time and better plan their operations, while also accommodating sudden needs for fresh yeast. The convenience of this product format may encourage brewers to experiment with a larger variety of yeast strains. We believe this product format could revolutionize regular propagations and serve as an ideal starting point for more experimental approaches such as fed-batch propagation.
Biography
Dr Aldo Lentini
Aldo has a Ph.D. in Bio-Organic Chemistry and Biochemistry specializing in Carbohydrates, Proteins and Biological Enzyme Technology. Has had over 37 years’ experience within the brewing/beverage industry, specializing in Raw Materials, Brewhouse and Process Operations, Fermentation Technology, Yeast Management, Flavour Development/Control/Stability, and Product Colloidal Stability. Providing technical brewing support in areas such as Enzyme Applications, NPD, Process Innovation and improvement projects. Aldo is a Fellow of the Institute of Brewing and Distilling. He is also member of the Educational Board of the Institute of Brewing and Distilling and is an examiner for the Diploma of Brewing (IBD). Currently Aldo is the Senior Industry Technology Manager – Brewing/Beverages for Novonesis - Food and Beverages BioSolutions Group, for the Asia Pacific region.
Dr Simon Carlsen
Simon Carlsen is currently working as Principal Application Specialist in the Fermented beverages department at Chr. Hansen A/S (now Novonesis A/S). He joined the company in 2018 and has primarily been working with the application of existing products for the brewing industry and with the development of new bacterial and yeast cultures for brewing applications. The main scope of this work has been on non-alcoholic and alcohol free beer production with a focus on optimizing the application of non-saccharomyces yeast. Simon holds a BSc degree in chemical engineering, a MSc degree in biotechnology and a PhD in metabolic engineering.
