A review of our experience of operating Krones PoseidonTM dynamic fermentation systems including a comparison with conventional fermentation and conditioning in cylindroconical vessels

Abstract

In 2019 Coopers Brewery commissioned the retrofitting of eight fermenters with Krones Poseidon dynamic fermentation alongside an identical set of eight cylindroconical vessels. In 2023 a set of four new larger fermentation vessels installed, also fitted with the Poseidon system. A comparative study of beer fermentation has been conducted using different yeasts and performance had been assessed in regard to:
• attenuation rate,
• yeast health and cropping,
• diacetyl production and reduction,
• management of cold break and turbidity,
• management of dry hopping,
• ester profile and flavour,
• CIP effectiveness
This is a review of our ongoing learnings in operating the Poseidon fermentation system over five years.

Biography

David Medlyn started working with Coopers Brewery in 1994 as a Control Systems engineer before he joined full time in 2002. David has been a member of the Institute of Brewers and Distillers since 2002 and achieved his IBD Diploma in Brewing in 2005 after studying brewing with Coopers and with the IBD in the UK and USA. He enjoyed the roles of Maintenance Manager and Senior Process Control Engineer before moving to the role of Technical Brewer in 2012 where he has led many continuous improvement projects, helping produce Coopers’ famous ales. Dave regularly joins the judging panels at the Royal Adelaide Beer and Cider Awards and the Australian International Beer Awards in Melbourne and enjoys organising regional meetings for the IBD in his home state of SA. When he’s not brewing, talking or sharing beers his other passions include keeping fit, sports cars and his family.
