NSW Distilling Yeast Presentation
Join us for an immersive evening combining cutting-edge distilling science, guided spirit tasting, and an exclusive tour of a newly established rum distillery in Sydney.
This in-person session includes a technical presentation on S. pombe rum distilling yeast, followed by a guided spirit tasting and an exclusive tour of the Red Mill Rum distillery. Attendees will gain practical insight into fermentation, flavour development, and the heritage and modern revival of Red Mill Rum, with time to network with fellow distillers and CIBD members.
Alex Moriarty is the Global Distilled Spirit Lead at AB Biotek with over 27 years of experience in the yeast industry. He has developed several industry-leading distilling yeast strains and recently introduced the world’s first commercially available non-Saccharomyces dried yeast for rum production.
