Join us for an exciting evening exploring the science of hops, thiols, and flavour chemistry in brewing.

We are also delighted to be hosted by the Waite Campus of Adelaide University, home to world-leading research into thiols and their impact on flavour in both beer and wine. Dr Dimitra Capone, an internationally recognised expert in thiols, wine and flavour chemistry is supervising the exciting PhD project being carried out by researcher Bradley Maddison, whose work focuses on the flavour effects of hop-derived thiols in beer.
This is a fantastic opportunity for brewers to deepen their understanding of hops and flavour chemistry while gaining insights into the advanced analytical capabilities at Adelaide University’s Adelaide Analytical, based at the Waite campus.

Polyfunctional Thiols in Advanced Hop Products
Polyfunctional thiols originating from hops occur at extremely low concentrations; however, their exceptionally low odour thresholds make them critically important in creating the highly sought-after tropical and fruity aromas found in modern beer styles. This research aims to identify and quantify polyfunctional thiols within advanced hop products and better understand their biotransformations during brewing.
Speaker Biography – Bradley Maddison
Bradley Maddison is a PhD student researching high-impact sulfur flavour compounds in advanced hop products, sponsored by Totally Natural Solutions Ltd (Paddock Wood, Kent). Bradley began his studies in 2019 at Newcastle University (UK), studying Chemistry with Medicinal Chemistry. In 2022, he completed a year-long research project with the University of Valencia’s Supramolecular Group in Spain before returning to Newcastle to complete a master’s degree focused on drug discovery research in 2023.
In 2024, Bradley commenced his PhD within the Bioenergy and Brewing Science Department at the University of Nottingham (UK). In 2025, he relocated to Adelaide University through the Adelaide–Nottingham Alliance and is now continuing his research within the School of Agriculture, Food & Wine. His work combines a passion for analytical chemistry with a strong enthusiasm for brewing science and beer flavour.
